  • coarse salt
  • coarse black pepper
  • extra virgin olive oil
  • garlic powder (optional)

Instructions

Place the sliced chili peppers into small slits in the salmon. Sprinkle coarse salt, coarse pepper, and garlic powder on top.

Drizzle oil on top and bake in the oven at 400 degrees for about 12 minutes.

Baked Garlic Salmon with Peppers

Ingredients1x2x3x

  • ▢ 2 salmon filets with skin (norwegian farmed atlantic salmon in a bbq cut is my favorite)
  • ▢ 4-6 cloves thinly sliced garlic
  • ▢ 1 sliced chili pepper (jalapeno, serrano, or thai chili depending on your spice tolerance)
  • ▢ garlic powder (optional
  • ▢ coarse salt
  • ▢ coarse pepper
  • ▢ extra virgin olive oil

Instructions

Prepping the Salmon

  • Heat oven to 400 degrees.
  • Oil the skin-side of the salmon and place it on your cooking pan with the skin down.
  • Gently cut multiple slits on the pink flesh part of the salmon making sure the cuts are big enough to fit your thinly sliced garlic and chili peppers.
  • Stuff garlic and chili peppers in each slit.
  • Sprinkle coarse ground black pepper, coarse salt, and garlic powder on top of the fish.
  • Drizzle cooking oil on the fish until it is coated well.
  • Place the pan in the oven and cook for about 12 minutes (could vary based on thickness).
  • Enjoy hot with a side of slaw salad, roasted/steamed veggies , or white rice .

Notes

I personally love Atlantic Salmon, but any thick-cut salmon with the skin can be great for this Chili Garlic Salmon Recipe.

Simple seasonings work well with a fish that is already packed with so much natural flavor. I recommend using subtle herbs such as rosemary, dill, and fresh thyme.

I recommend baking salmon with the skin side down on a baking rack like this one. Alternatively, grilling is also a great option.

The white stuff on salmon is called albumin, which is a protein found in fish oil. Once it is cooked it solidifies into an egg-white type of texture. So can you eat the white stuff on top of salmon? Of course, you can!

In most cases, this fish definitely tastes more distinct in flavor versus a white flaky fish (or even shrimp for that matter). My tip to assure the fish taste remains minimal is to cook it as fresh as possible and not let it sit in the refrigerator past the suggested date.

Albumin (white egg white looking texture) will show up on top and the fish will flake into pieces.

If you prefer salmon tender with no crisp then oven-baked salmon it is the way to go. If you want even a little bit of crispiness to your salmon, then broiling can work well.

How this recipe came about

I think this vegetarian recipe is long overdue, but definitely worth the wait. To say the least, it is a branch off of my favorite cheeseburger macaroni recipe (minus the burger). It holds true to the flavors and obviously a complete meal because Mac and Cheese can replace anything. Am I right or am I right? On top of that…. cheat days are allowed to happen with recipes like this.

What type of pasta to use

Traditionally macaroni and cheese uses elbow pasta which works well for this dish. There is no particular pasta I recommend, but here a few suggestions…

Mexican Mac n Cheese

CHEESE SAUCE INGREDIENTS

  • ▢ 2 tablespoon butter
  • ▢ 2 tablespoon all purpose flour
  • ▢ ¾ cup milk
  • ▢ 1 cup cheese (mexican blend and/or cheddar)
  • ▢ 2 tablespoon cream cheese (optional)
  • ▢ black pepper (optional)

PASTA INGREDIENTS

  • ▢ 4 cups diced, bell peppers and onions
  • ▢ 10oz can rotel
  • ▢ 1 package McCormick taco seasoning
  • ▢ 1 cup uncooked pasta of choice
  • ▢ 2 cups vegetable broth (or water)
  • ▢ 3 cloves grated fresh garlic
  • ▢ salt
  • ▢ red chili powder

Instructions

CHEESE SAUCE METHOD

  • Heat a saucepan on medium heat and add the butter to it. After it melts, add the all-purpose flour and whisk until golden brown.
  • Once the flour cooks through, add the black pepper + milk and continue to whisk until it comes to a boil and becomes smooth.
  • Remove the pot from the heat and add the cheese. Continue to whisk until the cheese is completely melted. Set it aside once melted.

PASTA METHOD

  • Heat a pan on medium high and add some oil. Once hot, add the onions and bell peppers. Cook until translucent.
  • Add taco seasoning, garlic, rotel, and red chili powder. Then mix it well.
  • Add the pasta and vegetable broth to the pot. Let it simmer on medium low for about 15 minutes.
  • Meanwhile, you can make the cheese sauce.
  • Once the pasta is fully cooked and the water has evaporated, stir in the cheese sauce.
  • Mix and continue to cook for about 3-5 minutes on low heat.
  • EAT :).

Make it healthier

A few ways to change up this recipe and make it healthier

  1. Use your favorite whole grain, brown rice, lentil, etc pasta.
  2. Incorporate other vegetables such as zucchini.
  3. Limit the amount of sodium by using water instead of broth.
