Ingredients

  • cream of mushroom or cream of chicken
  • shredded cheddar cheese or Mexican blend
  • green onions
  • cilantro
  • red chili powder
  • cooked chicken (rotisserie or frozen works too)
  • spaghetti
  • cream cheese
  • garlic or Trader Joe’ garlic spread
  • salsa or Rotel tomatoes
  • fresh chili peppers (optional)

Instructions

Cook the spaghetti per package instructions

In a pot add the chicken with some oil and cook it through to remove any “chicken taste”.

Add in the Rotel, cream of mushroom soup, and spices. Heat it through until a slight boil.

Add cooked spaghetti and cheese to the pot. Mix it through and enjoy warm with cilantro garnished on top and extra spice.

TIP: Bake the chicken spaghetti in the oven at 350 for 10 minutes for an even more authentic Southern dish

Variations

  • Vegetarian - remove the chicken completely and add whole black beans instead
  • Spicy - add chopped chili peppers during the cooking process
  • Baked Spaghetti Casserole - Place the cooked chicken spaghetti dish in a casserole pan and bake at 350 for 10 minutes.
  • Gluten Free- I like to use brown rice pasta spaghetti

Substitutions

  1. Precooked Chicken -use rotisserie chicken or frozen cooked chicken
  2. Rotel- use a generic canned tomatoes and chili pepper combo from your local grocery store.
  3. Spaghetti- Feel free to use any pasta type you like

Make it a Casserole!

  1. Pour the spaghetti into a casserole pan and top with additional cheese (optional)
  2. Bake until heated through at 350 degrees.
  3. Serve warm.

Top Tips

  • Make Extra! Here’s why - Serve the spaghetti warm off of the stovetop and save leftovers for baked spaghetti that can be served later in the week.
  • As a garnishment , add extra cilantro and fresh chili peppers on top before serving.

Chicken Spaghetti with Rotel Recipe

  • ▢ 8 oz dry spaghetti, angel hair pasta, fettucini, etc (cooked with very little salt)
  • ▢ 2 cups cooked and finely chopped chicken
  • ▢ 1 can cream of chicken soup or cream of mushroom soup
  • ▢ 1-2 tablespoon your favorite taco seasoning
  • ▢ 10 oz can of your favorite salsa or Rotel
  • ▢ 2 cloves fresh garlic, grated
  • ▢ 1 cup water (pasta water for thicker consistency)
  • ▢ ½ cup shredded cheddar or Mexican Blend cheese (more or less)
  • ▢ 2 tablespoon cream cheese
  • ▢ red chili powder or chili flakes, for spice
  • ▢ oil
  • ▢ salt (add at the end)

Garnishment

  • ▢ 4 sprigs green onion
  • ▢ ½ bunch cilantro
  • ▢ fresh chili peppers

Instructions

  • Cook the pasta according to packaged instructions.
  • In a pan, add some oil and cook the diced chicken. This step will help remove any “chicken” flavor if the meat is cold.
  • Add salsa, cream of chicken/mushroom, garlic, taco seasoning, and red chili powder to the chicken and mix well.
  • Add the pasta AND the pasta water to the pot.
  • Add in the shredded cheese and cream cheese and gently stir. Taste test and add salt and pepper accordingly.
  • Combine well and let it cook for a few extra minutes on medium-low heat (or you can place it in an oven safe pan, top with extra cheese, and bake until melted at 350 degrees)
  • Top with green onions, cilantro, and chili peppers.
  • Enjoy!

SHAMPOO AND BODY WASH

We have tried many different brands but absolutely love this brand and have been addicted for a few years now. It smells great, meets European standards, and the product cleans well with or without the addition of a scrubber . We also love using their lotions!

CONDITIONERS

Let’s face it, some kids need conditioner more than others. Mine need bottles of this stuff. The one conditioner I have found to work wonders is on the pricey side, but we absolutely love the end result. It has a scent that is calming for evening baths, and leaves hair smooth and detangled. In addition to that, curly hair has the softest bounce ever, IMO. Check it out here!

LOTIONS

Lotions: Although we have tried many different brands, there is one we keep coming back to. Hands down this is our favorite company in every aspect. We love the no rinse body wash and shampoo, which came in handy when our little one was in a cast for months.

We have tried Burts Bees, Aveeno, Cetaphil, Primo, Noodle and Boo, California Baby and a few other brands but we keep coming back to Mustela for more reasons than one. A few of the brands we have tried have left skin dry and a bit irritated. A travel kit is also available and I highly recommend it for the compact packing ability and the organizational bag it comes with. Refilling these bottles is easy and they are durable enough to last years ahead.

OTHER PRODUCTS

A few other products I want to note that make it to our skin routine is Argan Oil. Not only do I use this for hair, but also for skin. In the winter months, skin can get dry and every morning and evening I massage the kids face with some oil before bed. Argal Oil or JoJoBa Oil has been a go-to. They leave the skin soft and not greasy as imagined. Both products are available in an organic form at Trader Joes.
