How grilled pizza became a thing?

In my personal case, credit goes to my dear friend who I met through my kids school. She is a pizza enthusiast and an overall great cook. She talked me into grilling a pizza versus baking it one day and I am definitely thankful for it.

What kind of flour is best for pizza?

I recommend a fine powder-like flour, known as 00 flour, which is what’s used in traditional Italian Pizza. It is perfect to cook at a high temperature and gives you a chewy texture that is present with pasta and crusts of a pizzeria pizza. For this 00 flour grilled pizza, I recommend purchasing a 00 flour product that is labeled for pizza. Sometimes it is labeled as Italian 00 Flour.

What is the difference between all purpose flour and 00 flour?

This varies on which country you are buying the flour from since it is categorized differently everywhere. In a bigger scope of explaining the concept, in the United States, 00 flour just means the durum wheat flour has been ground to a powder-like form. Hence, the two zeroes originated in Italy letting buyers know that it is a powder-like form. The gluten in the flour behaves differently than that of regular all-purpose flour. In turn, makes the elasticity of the flour different from other similar flours. The chewy and bouncy texture is the reason 00 flour is perfect for pizza, pasta, and some cakes as well. The difference can also lie in the protein, which varies based on what type of grain is used to make the flour in the first place (red wheat or durum wheat). Do you need 00 flour for pizza?

There are many ways to make pizza, so for that reason, I am not going to say you “need” 00 flour. However, if you want that thick crust with bounce and some chew, like a Neopolitan type of pizza, then I highly recommend my 00 flour grilled pizza dough. What makes 00 flour so good is the powder-like form of the flour and its low gluten level. Meaning, its ability to stretch gives it that fluffy and bouncy texture. Plus, the tiny little bubbles that form when it cooks will give you all the joy you need :). For that reason, yes you need 00 flour for pizza. Joy! Trust me when I say, you will want to make this pizza crust over and over again.

Where can I buy 00 Flour?

This particular type of flour can be challenging to find at all grocery stores, but you can always buy it here. It is pricy compared to regular all-purpose flour, but worth it! If you want to buy locally, then give your larger grocery store a try or see if you can find a European market somewhere near for a variety of flours.

Does Trader Joe’s sell 00 flour?

Is pre-made 00 flour pizza dough good?

You bet it is! In most cases, the shelf life is not long but that is because the yeast in the 00 flour pizza continues to rise and can cause the dough to expand or go bad. For that reason, purchase AND definitely use it within the date range versus freezing it. Consider pre-making your own dough with spices as well. Mix 00 pizzeria flour with spices and place it in a plastic bag for up to 48 hours. It will expand in size so it’s best to allow space for the dough to grow. Hence, use a larger bag or container.

Can you substitute all-purpose flour for 00 flour?

You bet! The end result will be slightly different than 00 flour, but the pizza itself still turns out great. If you want to substitute for 00 flour then I suggest using all-purpose flour. However, you will need to adjust the water and oil measurements because it is not an exact 1:1 ratio! The difference in the flour is how finely it is grounded and the gluten level which is what gives the crust that perfect chewy texture without breaking your jaw. Flour labeled 00 means it is very finely ground compared to all-purpose flour which helps bind the pizza well. The gluten level is different in the two flours, which is what gives pizzeria pizza a nice bounce and the perfect chewy taste.

What temperature for 00 flour grilled pizza?

00 flour needs to be cooked at a very high temperature. So before you begin to make the pizza, you want to get the grill hot. Depending on which type of grill you are using I would suggest close to 400 degrees or higher on indirect heat. However, opening and closing the lid every three minutes can cool it down quite a bit. Take that into consideration when cooking. Although the grill thermometer states a temperature it is good to know that the heat under the pizza will be a lot hotter.

How do you make 00 Flour Grilled Pizza Dough?

Since a grill gets to a high temperature, 00 flour pizza dough is what I recommend. This high heat-resistant flour makes it easy to grill a pizza for that perfect chewy and fluffy crust. You can most definitely use this dough recipe to make pizza in an oven or a stovetop pan/grill. The pizza dough is going to need a few hours to rise after kneading. This will give you great end results with that perfect thick crust but a thin and crispy pizza in middle. To get that perfect pizzeria dough, knead according to the directions listed below in the recipe. Again, be sure to cook the pizza dough at a very high temperature.

  1. Cook one side of the pizza on the grill
  2. Flip it over and butter the edges of the pizza (garlic butter is a great substitute)
  3. Spread marinara or whatever sauce you like
  4. Spread cheese (mozzarella recommended)
  5. Add your toppings (less is more so be sure to sprinkle just a few)
  6. Cook on the grill for about 4-5 minutes
  7. Broil on low heat until the toppings are cooked and slightly brown.
  8. Remove from the oven and let it cool down for a minute or so.
  9. Cut the pizza

How to make pizza with grilled pizza dough?

Once the pizza crust has cooked on one side, flip the crust over, and then top it with some sauce and your favorite toppings. Cook it for double the time than the first side and then broil until the toppings and cheese are perfectly browned.

Is grilled pizza better than baked?

Is there a such thing as “not good” pizza? I mean come on, pizza is pizza! So no, grilled pizza is not necessarily better. But I can assure you, it’s a type of pizza you want to have on your rotation when meal planning. The slight taste of a smoky grill flavor gives this pizza a “cooked on in a brick oven” taste. Pretty much as close as I am getting to Italy right about now in the midst of Covid Era.

How to cook grilled pizza?

Cooking pizza on a grill is a lot easier than it sounds. My biggest concern was the dough will stick to the grill itself and/or it will fall through the grill. That is definitely not the case. Even when the dough is super soft, the stretched pizza dough will not fall through. Trust me, folks. It’s like magic!

What kind of grill do you need to make grilled pizza?

Any of them! I was skeptical to make it on a charcoal grill, but it turned out great. My friend uses her gas grill and it also turns out tasty. I’ve also made it on top of a stove using a grill pan, and even that was good. Its a matter of grilling the pizza to get the grill marks on the dough + high temperature cooking that makes the pizza come out the way it does.

Can you cook pizza using an indoor grill?

How do you feel about the Big Green Egg, Vision Egg, or a Kamado Grill?

These grills have shown to make really good pizza. However, the investment for any of these particular grills would be something to consider for you and your family. We considered the Big Green Egg and use it to smoke meats. However, buying an additional stone to make pizza was not something we thought would be a good investment and prefer to use either a stove top grill pan or an outdoor grill.

Does cooked pizza need to be refrigerated?

Since pizza consists of cheese I recommend refrigerating it. Considering the micro organisms in dairy products, regardless of it being cooked or not, I would take precaution and refrigerate the pizza. Plastic bags or containers work well for storage, but I prefer foil paper so I can dual purpose it when reheating. Simply unfold and bake on the same foil paper.

How do you reheat pizza?

I recommend an oven or a convectional oven. To bring the same flavor and texture consistency back to a cold slice of pizza, an oven does a phenomenal job. You can also try reheating grilled pizza in an air fryer .

What goes with 00 flour grilled pizza?

Sides to consider with grilled pizza can include a salad, roasted broccoli/cauliflower, or my all time favorite side roasted Brussels sprouts . You can cook them on the grill while making the pizza (considering there is space on the grill). Otherwise, the oven broiler is already on, so place your choice of vegetables on the bottom rack. Grilled Pizza

  • ▢ ¾ teaspoon yeast
  • ▢ 1 cup warm tap water
  • ▢ 1 teaspoon extra virgin olive oil
  • ▢ 1 teaspoon salt

  • ▢ ¼ tsp ajwain seeds

Instructions

KNEADING THE DOUGH

  • Combine the dry ingredients into a bowl (spices, flours, and salt)
  • In another bowl combine lukewarm tap water, yeast, and oil together. Mix and pour it into the bowl of dry ingredients. No need to wait.
  • Mix the contents with a spatula until a large ball has formed (about 2 minutes)
  • Let it set for about 10 minutes.
  • Dust a casserole pan or something similar with a generous amount of all-purpose flour and set it aside.
  • Dust your hands with all-purpose flour and knead the pizza dough for about 2 minutes with your hands until its smooth.
  • Divide the dough into two or three portions (smaller pizza portions have the tastiest results in my opinion.)
  • Form the dough into smooth round balls and lay them as far apart as possible on the dusted casserole pan.
  • Dust a generous amount of all-purpose flour on top of the pizza dough balls.
  • Cover the casserole pan with a damp kitchen towel and place it in a warm place for 3 hours. (oven with the light on works well)

GRILL

  • Heat a grill on high (about 400 degrees).
  • ALSO, heat your oven on low broil and place the rack two shelves from the top.

FORMING THE PIZZA

  • Dust a large surface with all purpose flour.
  • Grab one pizza dough ball with flour dusted hands and knead it softly in your hands. The size of the dough should have shrunk after kneading. Place it on the dusted surface.
  • Using your hands and fingers flatten the dough.
  • Now lift the dough and stretch it holding the very edge of the dough.
  • Once it gets to a bigger size or a long stretch, use your fists to hold the dough and continue to stretch. Thinner the better for a great crisp. Heads Up: The edges will remain thicker than the middle
  • Alternatively, you can roll the pizza dough using a large rolling pin.

COOKING THE PIZZA

  • Place the stretched dough onto indirect heat on grill
  • Cook for about 2-3 minutes. I advise to close the lid to the grill or cover the pizza but this is optional.
  • FLIP the pizza crust and butter the edges of the pizza for a nice golden crust. Garlic Butter works well too!
  • Add your toppings… Mozzarella Cheese is HIGHLY recommended. Cook for about 4-5 minutes on the grill to get the bottom of the crust brown and crispy. I advise closing the lid, but it is optional.
  • Now transfer the pizza onto an oven safe pan and broil on low for about 3 minutes.
  • Remove from the oven and place the pizza on a cooling rack (like the ones you use for cookies) and wait about 1-2 minutes before cutting.

Of course you can! Use the same technique of baking, flipping, and topping with your favorites. I recommend using a high oven temperature to cook the pizza since 00 flour needs to be cooked in extremely hot temperatures.

  1. Heat an oven to 450-500 degrees.
  2. Roll out the dough and place it on an oven safe pan.
  3. Cook for about 3-5 minutes.
  4. Take it out from the oven, flip it over, and top with your favorites (marinara, cheese, veggies, meats, spices, etc)
  5. Place back in the oven for about 7-10 minutes.
  6. Broil on low for 2 minutes to brown the cheese (optional)

How I came up with this Chicken Tikka Masala Recipe?

History: I absolutely love Chicken Tikka Masala (CTM)! It is the one dish I always order at Indian Restaurants. Whether I eliminate the chicken or not, it is the creamy sauce I crave over and over again. Am I making you drool yet? After eating it for years, I knew I had to learn how to make it. Lucky for me, my aunt owns an Indian restaurant! A very popular, award-winning, and tasty one for that matter. When I visited her during a work trip, I asked her one simple question “What’s the difference between Butter Chicken and Chicken Tikka Masala?” That conversation triggered the origination of this dish.

You see, my aunt was born in India, grew up in Africa, and moved to London to marry her sweet and loving British husband afterwards. Can you imagine the flavors in her restaurant? It truly is a paradise of food! Although she didn’t share every detail of her CTM recipe, I put together what I thought might work well with the dish and this recipe was born… in year 2007!

What is the difference between Chicken Tikka and Chicken Tikka Masala?

Chicken Tikka is a flavorful boneless chicken recipe that is enjoyed with a squeeze of lemon and garnishments whereas Chicken Tikka Masala has an Indian inspired creamy tomato gravy which pairs well with rice or naan.

Chicken Tikka Masala vs Butter Chicken

Both recipes are different and delicious. What is Kashmiri Chili Powder?

Kashmiri Chili Powder is a milder heat pepper that is used for flavor and color more than its spice. It has a distinct taste that pairs well with many North Indian or Fusion dishes.

I recommend using boneless skinless chicken thighs because you really can’t mess it up. Meansing, the meat will be very tender. However, if you want to save some calories and are comfortable cooking chicken breast without overcooking it, then by all means-GO FOR IT! I use what I have on hand and either way the dish comes out just as tasty!

What vegetarian substitutions do you recommend?

If you want to skip chicken or meat altogether, then give paneer a try. Chop it into small cubes and just substitute for chicken. You can also substitute extra firm tofu that is patted dry or soya chunks.

Tomato Sauce, Crushed Tomatoes, or Tomato Puree

I highly recommend using crushed tomatoes for this recipe. Here is why…

  • Tomato Puree is hard to find sometimes but it is a great alternative to Crushed Tomatoes if you have it on hand

Chicken Tikka Masala

Ingredients1x2x3x

Chicken Marinade

  • ▢ 1.5-2 lb boneless skinless chicken thighs, chopped into 1" pieces
  • ▢ 1 cup plain yogurt (or sour cream)
  • ▢ 2 tablespoon garlic, minced or grated
  • ▢ 1 tablespoon ginger, grated or blended
  • ▢ 1 teaspoon garam masala
  • ▢ 1 tsp Kashmiri chili powder
  • ▢ 1 teaspoon turmeric powder
  • ▢ salt

Chicken Tikka Masala Sauce

  • ▢ 2 medium onions, chopped or food processed finely (not puree)
  • ▢ 1 teaspoon garam masala (chicken tikka masala spice or curry powder)
  • ▢ 1 tablespoon garlic, grated or minced
  • ▢ 1 tablespoon ginger, grated or blended
  • ▢ 2 teaspoon cumin powder
  • ▢ 1 tablespoon Kashmiri chili powder
  • ▢ ½ teaspoon cayenne pepper powder
  • ▢ ½ teaspoon paprika powder
  • ▢ 1 teaspoon sugar (brown or refined)
  • ▢ 1.5 cup heavy cream
  • ▢ 12 oz tomato puree or crushed tomatoes (cento brand is what I use)
  • ▢ 1 teaspoon turmeric
  • ▢ 1 tablespoon coriander powder
  • ▢ 3 tablespoon butter
  • ▢ 3 tbsp oil
  • ▢ 1 cup water (if needed)
  • ▢ salt
  • ▢ red chili powder

Instructions

Chicken Marinade

  • Combine the chopped chicken, turmeric, ginger, garlic, salt, yogurt, garam masala and Kashmiri chili powder together.
  • Mix it well and set it aside while you prepare the other ingredients.

Cooking Instructions

  • In a wide bottom pan heat 3 tablespoon of oil on medium/high heat.
  • Add the marinated chicken to the pan covering as much hot surface as possible (cook the chicken in multiple batches if the pan does not fit all of the chicken)
  • Cook for about 3 minutes and then gently flip the chicken over to cook the other side.
  • Remove the cooked chicken from the pan into a metal or glass bowl. Cover the bowl with foil or a lid so it remains hot while you make the sauce.
  • In the same pan you cooked the chicken in, add 3 tablespoon of butter.
  • Cook the finely chopped onions until translucent. Continue to scrape the pieces off of the bottom of the pan and allow the onions to cook fully.
  • Add 1 tablespoon of grated ginger and 1 tablespoon of grated garlic to the pan and cook for about 10 seconds.
  • Add turmeric, garam masala, coriander powder, and cumin powder. Mix it well and then add crushed/pureed tomatoes.
  • Cook for about 1 minute or until heated through.
  • Add paprika, cayenne, Kashmiri chili powder, red chili powder, and sugar to the pan.
  • Mix well and then add the heavy whipping cream. Using a hand blender, carefully blend the sauce into a creamy consistency. (you can also place in a blender to puree or eliminate this step.)
  • Once the sauce is heated through and bubbling, slowly add the chicken back into the pot.
  • Mix, add water, cover, and cook for about 5 minutes on medium/low heat.
  • Garnish with ½ cup of finely chopped cilantro.
